Is brewing yeast the same as baking yeast?
No. Brewing yeast strains are chosen for how they ferment beer: how much sugar they use, how clean or fruity they taste and how well they settle out. Baking yeast is bred to raise dough. The brewer's yeast sold as a health supplement is inactive and will not ferment at all.
What is the difference between ale and lager yeast?
Ale yeast ferments warm, around 18 to 22°C, and produces the fruity, complex flavours behind pale ales, IPAs, stouts and porters. Lager yeast ferments cooler, around 10 to 15°C, for the clean, crisp finish of pilsners and European lagers. Many home brewers make their lagers in the cooler months.
Should I use dry or liquid yeast?
Dry yeast is the easier choice for most home brewers. It has a longer shelf life and is more forgiving than liquid yeast. Every yeast in this range is a dry sachet.
Which yeast should I start with?
SafAle US-05 is the most versatile dry ale yeast and a reliable starting point. It ferments clean and neutral, so it suits pale ales, IPAs and amber ales and lets the hops lead.
