When to Choose M05

Choose M05 over wine yeasts (EC-1118, K1-V1116) when preserving honey aroma is the priority. Lalvin yeasts are more aggressive and may strip delicate floral notes from premium honey varietals. M05 is designed specifically for honey fermentation.

Practical Notes

Staggered nutrient additions are essential for mead. Do not add all yeast nutrient at once at the start. Add nutrient in 3–4 doses over the first 72 hours of fermentation. A single large dose at pitch stresses the yeast; staggered additions support clean, complete fermentation throughout.

Honey is nutrient-poor — mead almost always needs nutrient supplementation. Without it, fermentation produces hydrogen sulphide and can stall.

Degas the mead regularly during the first few days of fermentation — CO2 trapped in honey must is stressful for yeast.

Keep refrigerated. Once opened, reseal and use within 7 days.
