Ginger Beer Homebrew Kits

Yes. The Old Fashioned Ginger Beer kit can be made either as a soft drink or as a hard alcoholic ginger beer. The soft drink version comes out at about 0.5% or less, because you are only using fermentation to create a little gas rather than to convert all the sugar.

The Old Fashioned Ginger Beer pack with Blend #20 and 1kg of dextrose produces a semi-sweet alcoholic ginger beer of about 4.5%. You can vary that by changing how much fermentable sugar you add.

Because the yeast kept eating. If fermentation continues in a sealed bottle the pressure keeps building, and the ginger beer will either gush out the moment you open the cap or burst the bottle in storage. For the soft drink version use screw-top plastic bottles rather than glass, check them by squeezing, and refrigerate once a bottle feels firm to slow the yeast down.

Use lactose. It is a non-fermentable sweetener, so the yeast cannot convert it. Lactose is about half as sweet as sugar, and you can add more or less to suit your taste. Ordinary sugar will simply ferment out and add to the alcohol and the pressure instead.

A 25 or 30 litre fermenter, enough bottles for 20 litres, carbonation drops or priming sugar, and sanitiser. The AHB Starter Ginger Beer Making Kit bundles the gear with a Buderim kit and a twin-lever capper if you are starting from nothing.
