M41 is a highly versatile Belgian ale yeast that produces the fruity, estery, spicy character found across the broad range of Belgian styles. Its flavour profile shifts noticeably with fermentation temperature — giving you direct control over the finished beer's character. Very high attenuation produces the dry finish essential to many Belgian styles.

- Saison, Farmhouse Ale, Dubbel
- Belgian Tripel (lighter character — for extreme attenuation, use M31)

When to Choose M41
Choose M41 over M47 Belgian Abbey when your recipe is a lighter Belgian style — pale, golden strong, saison. M47 specialises in darker, richer abbey character. M41 is the more versatile option across lighter Belgian styles.
Choose M41 over T-58 when you want more fruit than spice. T-58 leads with phenolic, peppery character; M41 leads with fruity esters. For a saison or golden strong where fruit is the focus, M41 is the better fit.
Practical Notes
Temperature is a deliberate flavour tool with M41. Pitch at 18°C and allow the temperature to rise naturally through active fermentation. At 18–20°C the profile is restrained and balanced. At 24–28°C the esters become pronounced and spice character intensifies. Holding at a fixed temperature throughout produces a flatter result than allowing a natural rise.
For high-gravity Belgian ales above 1.070, add yeast nutrient before pitching.
Keep refrigerated. Once opened, reseal and use within 7 days.
