When to Choose M54
Choose M54 over M84 or M76 when you do not have cold fermentation capability. M84 and M76 produce better results at 8–14°C but stall and produce off-flavours if fermented warm. M54 is specifically designed for warm-fermentation lager.
Choose M54 over M24 Versa Lager when you have no cooling at all and must ferment at normal ale temperatures (17–23°C). M24 performs best with some cooling (10–18°C); M54 is the right choice when there is no cooling available.
Practical Notes
A cold crash after primary fermentation significantly improves clarity with M54, even though primary fermentation was at ale temperature. One week at 2–4°C after primary gets you noticeably closer to lager clarity.
M54 may produce a light sulfury note during active fermentation — normal for lager strains, dissipates during conditioning.
Pitch at 18–20°C and hold steady. Above 23°C the lager character begins to drop away.
Keep refrigerated. Once opened, reseal and use within 7 days.
