Very low flocculation is a characteristic of the strain — the beer is meant to stay hazy.

When to Choose M21
Choose M21 over M20 Bavarian Wheat when your recipe is witbier rather than hefeweizen. M20 leads with banana and clove; M21 is more citrus-forward and spicy. The styles are related but the yeast character is distinct — use the correct yeast for the style.
Practical Notes
Do not fine or filter a witbier made with M21. The permanent haze is the yeast in suspension — it carries the citrus and spice flavour. Fining removes the character you brewed for.
Swirl the bottle before pouring to resuspend the yeast sediment — this is the traditional way to serve witbier.
Ferment at 18–20°C for a balanced citrus-spice profile. Warmer fermentation pushes more ester expression.
Keep refrigerated. Once opened, reseal and use within 7 days.
