When to Choose M02
Choose M02 over EC-1118 when fresh fruit flavour is the priority. EC-1118 ferments more aggressively and tolerates higher alcohol, but strips the delicate fruit character out of apple juice in the process. M02 is gentler and keeps the fruit in the glass.
Practical Notes
Yeast nutrient is essential in cider. Apple juice lacks the nitrogen, minerals, and vitamins that malt wort provides naturally. Add a sachet of yeast nutrient to the juice before pitching — without it, fermentation is sluggish and often produces hydrogen sulphide. This is the most common cider fermentation problem and the simplest to prevent.
Ferment at 18–20°C for the best fruit retention. Higher temperatures push fermentation faster but reduce the delicate aromas you are trying to preserve.
Keep refrigerated. Once opened, reseal and use within 7 days.
