When to Choose M76

Choose M76 over M84 when you are brewing Munich styles — Helles, Märzen, Dunkel. M76 is fuller and more malt-forward, which suits Munich character. M84 produces the drier, crisper profile of Czech and Bohemian styles.

If you do not have cold fermentation capability, use M54 California Lager instead. M76 will not perform well above 15°C.

Practical Notes

The diacetyl rest is not optional. After primary fermentation, raise the temperature to 18°C for 48 hours before moving to cold conditioning. Skipping this produces butterscotch character in the finished beer.

Two sachets per 23L is standard for cold lager fermentation. Pitch at 10–12°C. M76 produces sulfur during active fermentation — normal, dissipates during conditioning.

Keep refrigerated. Once opened, reseal and use within 7 days.
