M36 is a versatile American ale yeast with a clean fermentation profile and a touch more body than a purely neutral strain. It suits the broad range of American ales where you want clean character without the complete neutrality of a West Coast yeast — a small amount of fruity roundness that supports the malt without dominating.

When to Choose M36
Choose M36 over M44 when you want a slightly softer, more balanced beer rather than maximum dryness. M44 attenuates more aggressively and emphasises hop character; M36 leaves a touch more body and is a better fit when the malt bill needs support.
Choose M36 over M15 when you want American rather than English character. M15 is expressly British in its ester profile; M36 is clean with only a subtle fruit note that suits American styles.
Practical Notes
The subtle fruit note is most noticeable at the upper end of the temperature range (22–23°C). Ferment at 18–20°C for a cleaner result where the slight body is retained but ester character is minimal.
Rehydrate in 10x its weight in 27°C water, or pitch directly at fermentation temperature. Works well for all standard-gravity American ales without nutrient supplementation.
Keep refrigerated. Once opened, reseal and use within 7 days.
