The details

The Air Still Pro is a small-batch benchtop still that runs two ways. Reflux mode strips the wash back to clean neutral spirit at up to 90% ABV, the base for vodka or any essence. Pot still mode keeps the character in at up to 80%, and with the included botanical basket that means gin. Swapping modes is a matter of changing the distillation tip.

It cools itself with a built-in fan, so there is no plumbing and no water supply to organise, and the first 30ml of each run is collected automatically in a foreshots vial. Already own a standard Air Still? The Air Still Pro Head Unit upgrades it instead.

A note on the law: in Australia you need a licence from the ATO to distil spirits, including at home. The Air Still Pro also has uses that do not require a licence, such as distilling water and extracting botanical oils and hydrosols.

Who it's for

A benchtop still for someone who wants to make spirits without turning the kitchen into a workshop. It runs off a normal power point, needs no cooling water and no plumbing, and packs away in the pantry afterwards. Suits a first-time distiller who wants it to work the first time, and an experienced one who wants a second, faster still for small runs.

What's the difference between the Air Still Pro and the original Air Still?

The Pro adds built-in temperature control, a refined condenser and pot-mode capability - more consistent runs and the ability to make botanical gin. The original Air Still is the budget entry (a full setup for under $500) and can make good spirit, but it takes more care to get the same quality. The Pro has been our biggest-selling unit for two years for a reason.

Do I need a water connection?

No - fan-cooled, benchtop, standard power point. No plumbing, no water hookup, apartment-friendly.

What else do I need to actually make spirit?

The still is the distilling half; you'll also need the fermentation side - fermenter, yeast, sugar or wash ingredients - plus carbon filtration and flavouring. The Air Still Pro Complete Distillery Kit bundles the lot; if you're buying the still solo, our team can put together the missing pieces around whatever gear you already have.

Air Still Pro or Turbo 500 - how do I choose?

The first question we ask is: what do you like to drink, and what's your setup? Small space, no water access, small batches - Air Still Pro. Plenty of room and an appetite for larger volumes - the Turbo 500's 25L boiler produces around 10L at 40% per wash, about ten times the Pro's per-run output. Budget-wise a full setup of either lands in similar territory ($850-$1,000), so it's about fit, not price.

Is home distilling legal in Australia?

Distilling equipment is completely legal to buy and own in Australia. Manufacturing spirits requires an excise manufacturer licence from the ATO, and stills have licence-free uses like distilling water and essential oils. Check current ATO requirements before use.
