The details
Still Spirits Distiller's Nutrient Dark Spirits is a 450g tub of yeast nutrient formulated for washes that are meant to keep their flavour. Still Spirits describes it as "especially formulated for enhanced congener production during fermentation of alcohol for dark spirits", so it is the nutrient for rum, whisky and fruit brandy washes, not for a neutral spirit.
What it does
A distiller's yeast fermenting molasses or grain needs nitrogen, vitamins and minerals it does not get from the wash alone. Starve it and it ferments slowly, stalls, or throws harsh sulphur notes. This blend feeds it fully and, unlike the Light Spirits version, it is built to let the yeast produce the congeners a dark spirit is made of. It includes an antifoam, which matters in a molasses wash.
How much to use
Still Spirits' rates for a 25 litre wash: sugar wash 75g (up to 15% ABV), fruit mash 50g (up to 15% ABV), molasses wash 50g (up to 12% ABV). Dissolve it in the wash before pitching the yeast. One tub covers six sugar washes or nine molasses washes.
When to choose it
Use this with the Rum or Whisky distiller's yeasts. For a vodka, gin base or any spirit that will take an essence, use the Light Spirits nutrient instead.
