The details
Still Spirits Distiller's Yeast Rum is a 20g sachet of active dried yeast for a 25 litre rum wash. Still Spirits describes it as a yeast that "optimises the fermentation's congener profile and brings forward the smooth and full-flavoured molasses characteristics expected in an authentic rum".
What it does
A rum is defined by what the yeast does with molasses. A turbo yeast would ferment it clean and leave you with something closer to vodka; this strain keeps and builds the molasses and fruit character so the spirit tastes like rum coming off the still. Still Spirits says it suits both white rum and darker rums that will be aged.
How to use it
Add the sachet directly to the fermenter and ferment at 20 to 34 degrees ambient. A molasses wash is hungry, so pair it with the Dark Spirits nutrient at Still Spirits' molasses rate of 50g per 25 litres. Distil on a pot head, not a reflux column, to keep the flavour.
When to choose it
Choose this for any rum, from a white mixing rum to a dark one for oak. Choose the Whisky yeast for grain, and a turbo yeast for a neutral spirit that will take an essence.
