The details

Hoppy beers at 3.9% usually go thin. This one carries 500g of light wheat dry malt for a smooth body and a head that holds, so the passionfruit and pineapple from 75g of Australian hops have something to sit on. Big aroma, soft bitterness, clean finish. And there is no long boil: 5 minutes for the wheat malt, the hopped kit stirred in off the heat, then a 20-minute hop stand.

All the passionfruit of a hoppy pale ale, at school-night strength.

Bright, juicy and easy at 3.9%. The XPA for people who love flavour but would like to have more than one.

  • Black Rock Classic XPA 1.7kg
  • Light wheat dry malt 500g
  • Galaxy 50g, Vic Secret 25g
  • Mangrove Jack's M66 Hophead yeast

Makes 20L. You add water, carbonation drops and a bit of patience.

How it drinks

Pale gold with a light haze and a soft white head. Galaxy in the hop stand brings passionfruit and peach, then Vic Secret and Galaxy go in during fermentation for a pineapple hit the yeast turns up even louder. Wheat malt gives it a smooth, easy body.

100% Australian hops. Big aroma, soft bitterness, clean finish.

Brew day

Boil the wheat malt for 5 minutes, stir in the kit off the heat, then a 20-minute hop stand. Top up to 20L and pitch. Dry hop on day 2 or 3 while the yeast is going hard. About 40 minutes hands-on, no long boil.

Ready to drink in 5 weeks. Hop aroma is best fresh, so enjoy it within 2 months of bottling.

Good to know

Fits a standard 5L kitchen pot. You'll need a fermenter, bottles, carbonation drops (1 per 330ml, 2 per 750ml) and a hydrometer. Ferment between 18 and 22°C. If you're landing here without gear, a starter kit gets you the fermenter, hydrometer and bottling essentials in one box.
