A West Coast IPA you can have three of on a school night.
Pine, grapefruit and a crisp, snappy finish, all at 3.9%. This is the beer for when you want proper hop character but still want to get up in the morning.

- Light wheat dry malt 500g: holds the head and keeps it from going thin

Makes 20L. You add water, carbonation drops and a bit of patience.
How it drinks
Golden with a tight white head. Centennial and Cascade in the boil give you the classic citrus and pine, Amarillo in the hop stand adds a soft orange edge, then a double dry hop finishes it off. Caramalt and wheat keep it from going thin, which is the trap most low-alcohol IPAs fall into.
Well-hopped, not bitter. Dry, not watery.
Brew day
Steep the grain, stir in the malts, 60-minute boil with two hop additions, 20-minute hop stand, top up to 20L and pitch. Dry hop for 3 to 5 days once fermentation is done. About 2 hours hands-on, then the yeast does the rest.
Ready to drink in 5 weeks. Best within 2 months of bottling while the hop aroma is at its peak.
Good to know
The boil fits a standard 5L kitchen pot. You'll need a fermenter, bottles and carbonation drops (1 per 375ml, 2 per 750ml). Ferment between 18 and 22C for the cleanest result. If you're landing here without gear, a starter kit gets you the fermenter, hydrometer and bottling essentials in one box.
