Turbo 500 Ultimate Distillery Kit - Copper T500, Alembic Pot Still & Filter Pro
Both stills and the filter, in one package. A copper Turbo 500 for clean neutral, a copper Alembic pot still for the whisky, rum and brandy styles where you want the character to stay in, and the stainless Filter Pro to polish the result. Note the boiler is not included, since it is the one part both heads share.

The details
The Ultimate kit is two stills and a filter in one system. The Turbo 500 Copper Condenser is a reflux still: it strips the wash back to clean neutral spirit at up to 93% ABV, ready for filtering and flavouring. The Alembic Copper Dome and Condenser is a pot still: it keeps the character of what you ferment, which is how gin, whisky, rum and brandy get made. Both mount on the same Still Spirits 25L boiler, sold separately.
The large copper surface of the alembic dome works on the vapour as it passes, concentrating flavour and stripping sulphur compounds, for a smoother, richer spirit. To make gin, add the botanical basket, fill it and fit it under the dome.
The Filter Pro finishes the neutral runs: a gravity fed 304 stainless carbon filter that takes 8L of spirit at a time through 500g of activated carbon, with flow control and filter papers to keep the carbon where it belongs.
Hamish's verdict: this is the no-regrets setup. Most people end up wanting both styles eventually; buying them together means the boiler, fermenter and testing gear are shared instead of doubled up.
A note on the law: in Australia you need a licence from the ATO to distil spirits, including at home. Stills of 5L or under may be used without a licence for water purification or essential oil extraction. In New Zealand a still of up to 25L may be used at home to produce spirit for personal consumption.

Quick answers
Questions about this product, shipping and orders. See the FAQ page for more topics.
Monday to Friday, 9-4pm AEST.We normally get back to you within a day—often sooner.
Will the T500 fit the boiler I already have?
It fits the Still Spirits Create+ boiler and the Grainfather G30, G40 and G70. Running something else? Ask us before you buy and we'll confirm it.
How much spirit does one run make?
A 25L wash yields around 3.5 litres at up to 92% ABV. Diluted and carbon polished, that becomes your first 8L batch.
Why does this kit have two stills?
They do different jobs. The copper Turbo 500 is a reflux still that makes clean, neutral spirit for essences and gin. The copper alembic dome is a pot still that keeps the flavour and character of what you ferment, for whisky, rum and brandy. Both fit the same Still Spirits 25L boiler, so you swap tops, not systems.
Can I make gin with the alembic still?
Yes, with a botanical basket, which attaches under the alembic copper dome and is sold separately. Fill it with botanicals and the vapour picks up the flavour on its way through.
Do carbon fines end up in the spirit?
A few can show up on the first pour. Filter Pro papers catch them.
Is it legal to own a still in Australia?
Yes, stills are legal to buy and own. Distilling alcohol requires an excise manufacturer licence from the ATO; distilling water or essential oils needs no licence.
