The details

Still Spirits Distiller's Caramel is a 50ml bottle of stable caramel colour for spirits. It turns a clear neutral spirit the warm gold of an aged whisky or rum without adding sweetness or much flavour, which is exactly what it is for.

What it does

Still Spirits describes it as "a stable caramel colour, suitable for distilled spirit as it has a negative colloidal charge and imparts a warm golden hue to the spirit". In plain terms, it stays evenly mixed in spirit rather than dropping out, and it colours without clouding. Commercial distillers use the same class of caramel for the same reason.

When you use it

It is designed for the Whiskey Profile range, where you build a whisky from separate flavour components and add colour last. It also rescues any Top Shelf spirit that has come out paler than the style suggests. It does nothing for taste, so if the spirit is thin, fix the flavouring first.

How much

Still Spirits does not publish a fixed dose; the Craft Kit recipe booklets give the amounts for their recipes and otherwise they say to experiment. Start with a few drops per 750ml bottle, stir, and hold the bottle against a white background before adding more. It is far easier to add colour than to take it out.
