The details
The Air Still Pro is a compact benchtop distillery: it sits on the kitchen bench, runs off a normal power point, and packs away in the pantry when you are done. No hoses, no plumbing. And this is the complete kit, not just the still: the fermenter, the filtration, the measuring gear and the ingredients for your first run are all in the box.
What you can make. One unit, two modes. Reflux mode delivers clean neutral spirit up to 90% ABV, the base for vodka and any Top Shelf essence. Pot still mode keeps character in the spirit at up to 80% ABV, and the included botanical basket makes it a gin still. Whiskey, bourbon, rum, liqueurs and infusions all start from the same neutral base.
Why the Pro. A built-in fan does the condensing, which is what makes it an appliance rather than a project. A reflux run takes about four hours for roughly 600ml at around 90%. And it works the first time: one owner put it, 'no muss no fuss, worked first time.'
Owner tips. Grab a 30L fermenter early so one ferment feeds several runs. For an ultra-clean drop, double distil: run it once, dilute, run it again. If the carbon filter seals too tight and stops flowing, change the filter washers.
Hamish's verdict: this is the one I point people to for getting into distilling without overcomplicating things. If you like the idea of making your own botanically infused gins, it is a brilliant option.
How it compares. Against the standard Air Still: the Pro adds the reflux column and dual modes (the standard unit is pot-only to about 60%). Against a Turbo 500: the T500 is water cooled and built for bigger volumes and maximum purity; the Pro is the compact, fan cooled way in. Start here, scale later if you catch the bug.
A note on the law: in Australia you need a licence from the ATO to distil spirits, including at home. The Air Still Pro also has uses that do not require a licence, such as distilling water and extracting botanical oils and hydrosols.

What is the difference between this and a bigger system like the T500?
The Air Still Pro is a compact benchtop unit for smaller, easy, high quality runs. The T500 is built for larger volumes and maximum purity. Many people start on the Air Still Pro and move up later.
What spirits can I make?
Clean neutral spirit for vodka, gin with the botanical basket, and whiskey, bourbon or rum using Top Shelf essences. Liqueurs and infusions too.
Does the filtration actually improve the result?
Yes. Carbon filtering is essential and it smooths and polishes the spirit, improving clarity and finish. It is part of getting a clean, good-tasting drop.
Do I need anything else to get started?
No. This is the complete kit, so you have the still, the fermenter, the ingredients and the measuring gear. You will just top up consumables (yeast, carbon, essences) as you keep making batches.
Are there any handy additions that make the process even better?
A couple of simple add-ons make it even better from the start. Grab an extra pack of Air Still Carbon cartridges to give you the option of double filtering. A spare pack of Air Still Washers to go with the extra carbon. Finally, one of the best hacks in spirit making is glycerine to smooth, mellow and add a premium mouthfeel to your finished spirit.
