The Air Still Complete Distillery Kit pairs the Still Spirits Air Still with the Essentials Distillation Kit, covering the whole process: preparing and fermenting the wash, distilling, filtering, diluting and flavouring the finished spirit.
The Air Still itself is an air cooled pot still. A built-in fan condenses the vapour, so there is no water supply to organise and nothing to plumb in. It distils small batches of neutral or botanical spirit at up to 60% ABV, sits on a kitchen bench while it works and stows in a cupboard between runs. It also suits distilled water and hydrosols, and a botanical basket (sold separately) turns it to gin.
A note on the law: in Australia you need a licence from the ATO to distil spirits, including at home. Stills of 5L or under may be used without a licence for water purification or essential oil extraction. In New Zealand a still of up to 25L may be used at home to produce spirit for personal consumption.

How does the Air Still turn a wash into spirit?
Four stages. Ferment a wash of sugar, water and Turbo yeast over 7 to 10 days. Distil the wash in the Air Still, which collects around 700ml of spirit at roughly 60% ABV in an hour. Filter it through activated carbon, then dilute to 40% and flavour with the essence of your choice.
How long does a batch take?
The wash ferments over 7 to 10 days and a distillation run takes about two hours on the bench. Allow a little more for carbon filtering and flavouring.
