The details

AHB AP White Champagne is our own-label all-purpose wine yeast for white, sparkling and fruit wines, packed for up to 100 litres. It is the commercial-grade strain type that winemakers use, repacked in a quantity that suits anyone making more than a single demijohn.

What it is good at

A champagne-type strain ferments cleanly and completely, tolerates the cooler temperatures white wine is made at, and leaves the fruit character of the must alone. That suits whites, sparkling bases and the fruit wines that make up a lot of home winemaking in Australia. It is also a strong restarter if a ferment stalls.

When to choose it

Choose this over a 5g sachet when you are making 20 litres or more at a time, or several batches through a season, because the per-litre cost drops sharply. Choose the AHB Red for red wine where you want a warmer ferment and more body. For a single small batch, Lalvin EC-1118 is the same idea in a sachet.

How to use it

Rehydrate the dose for your batch in a little warm water before pitching. Keep the must within the yeast's range, which for wine yeasts is usually 18 to 24 degrees, and use a nutrient in fruit wines. Reseal the pack and keep it in the fridge between batches.
