Why is the thermometer important for Alembic pot still distillation?
In pot still distillation you need to make cuts - separating heads, hearts, and tails by aroma and temperature. A faulty or inaccurate thermometer makes this significantly harder. If your readings seem off, replace the thermometer before your next run.
