Still Spirits has released the latest in its Batch 89 Limited Edition series, the follow-up to the Batch 89 Bourbon. This Reserve Gold Rum kit flavours 3.5 L of neutral spirit or vodka, aged your way with real French and American oak.

Expect sticky brown sugar and soft honey up front, with toasted oak carrying through the finish. It's a proper Caribbean-style golden rum, and the oak chips let you push the aged character as far as you like.

The kit includes everything for flavouring, oaking and bottling, right down to five Batch 89 labels for the finished product.

How to use

Add the essence to your neutral spirit or vodka, oak to taste over several weeks, then bottle.

What's in the box

• Batch 89 Gold Rum essence (3 x 50 ml)
• American oak chips (70 g)
• French oak chips (70 g)
• Glycerine (50 ml)
• Mixing and ageing instructions
• 5 x customer bottle labels

Makes 3.5 L of finished spirit (approx. 5 x 700 ml bottles, or 7 x 500 ml craft bottles).
