The details

Gipps St is the pale ale Collingwood drinks, and Stomping Ground took Champion Australian Independent Beer at the 2026 AIBA. This kit follows the commercial grain bill with a crystal and Munich steep for colour and a light toffee note, wheat malt for body, and a Black Rock XPA base so there is no long boil. Amarillo and Cascade go in as a 20-minute hop stand for orange, grapefruit and pine, then Mosaic is dry hopped for tropical fruit on top. US-05 keeps the finish clean and dry.

Collingwood's favourite pale, now in your fermenter.

Our clone of Stomping Ground's Gipps St Pale Ale. Amarillo, Cascade and Mosaic for orange, grapefruit and pine. A touch of crystal and Munich for a light toffee backbone. Dry finish, 5.2%.

  • Light wheat dry malt 250g

Makes 21L. You add water, carbonation drops and about four weeks.

How it drinks

Golden amber with a firm white head. Amarillo and Cascade in the hop stand bring orange, grapefruit and pine, then Mosaic goes in during fermentation for tropical fruit on top. The crystal steep gives it a light toffee backbone, and the wheat malt rounds out the body. Balanced bitterness, dry finish.

Brew day

Steep the grains for 20 minutes, add the malts and boil for 5 minutes, then a 20-minute hop stand with the lid on. Pour the kit into the fermenter, strain the hopped wort on top, top up to 21L and pitch the US-05 once it is below 25C. Dry hop with Mosaic when the bubbling slows. About 50 minutes hands-on, no long boil.

Ready to drink in 4 weeks. Hop aroma is best fresh, so enjoy it within 2 months of bottling.

Good to know

Fits a standard 5L kitchen pot. You'll need a fermenter, bottles, carbonation drops (1 per 330ml, 2 per 750ml) and a hydrometer. Ferment between 18 and 20°C. If you're landing here without gear, a starter kit gets you the fermenter, hydrometer and bottling essentials in one box.

Our clones come from the same family tree. Critters Pale Ale is our best seller, Fat Yak is built from the original 2009 recipe, and Bolter XPA is the bright, tropical one.
