The details
The Original Mexican Cerveza is a clean, crisp, refreshing Mexican-style lager that makes 21 litres at 4.2 to 4.6% ABV. It uses Mangrove Jack's Californian Lager yeast at ale temperatures to deliver the ultra-clean, light-bodied character the style is loved for, with a light golden pour and a bright white head.
What it is like to brew
The appeal of a Mexican cerveza is how clean and easy it drinks, and that clean character is deceptively hard to get right. Any off-flavour has nowhere to hide in a beer this delicate, which is why the Californian Lager yeast matters, it ferments at ale temperatures while producing a crisp, lager-like result. Lightly hopped with mild pine resin and subtle fruit, it is built for a warm day.
Why this kit works
- Mangrove Jack's Californian Lager yeast for a clean lager character at 18 to 20 degrees
- Light malt base and mild pine-resin hops for an ultra-clean, delicate beer
- Ferments without a lagering fridge, no temperature control needed
- Light, crisp and refreshing, an easy-drinking crowd-pleaser
When it makes sense
A good option for a hot day, a barbecue or anyone after a clean, light, refreshing beer. Serve it cold, with a squeeze of lemon or lime if you like, and it suits beginners and experienced brewers alike.

Hamish's verdict
In a beer this clean there is nowhere to hide, so sanitation and a steady ferment matter more than usual. Keep it at 18 to 20 degrees, serve it very cold, and it punches well above a kit beer for refreshment on a hot day.

What temperature should I ferment this lager kit at?
Check the yeast instructions included with your kit. Most kits designed for home use with warm-fermentation lager yeast such as Mangrove Jack's California Lager work best at 18 to 20 degrees C. If your kit includes a true lager strain (Mangrove Jack's Bavarian Lager M76 or similar), aim for 10 to 14 degrees C for the cleanest result. This is ideal for winter brewing. During warmer months a temperature-controlled fridge will be required.
How do I get my lager to come out clear?
Cold crash the fermenter to 2 to 4 degrees C for 48 hours after fermentation is complete. This drops yeast and proteins before bottling. Use a fining agent (Clearfine isinglass finings) if needed. Avoid shaking or disturbing the fermenter during bottling. Refrigerate bottles for at least a week before drinking.
What is a malt extract recipe kit?
A malt extract kit provides the main fermentable sugars in a concentrated liquid or dry form, already converted from grain at a commercial brewery. You add water, yeast, hops, then ferment. It skips the grain mashing step, which cuts brew day down to about 30 to 45 minutes while still producing full-flavoured craft beer.
What is the difference between an extract kit and a fresh wort kit?
A fresh wort kit (FWK) delivers pre-brewed, unfermented wort in a bag, ready to pour straight into the fermenter and pitch yeast. No heating required. An extract kit requires you to dissolve the malt in hot water and add hops at various stages, which takes about 30 to 45 minutes. FWKs produce brewery-fresh flavour with almost zero work.
What equipment do I need to brew this kit?
You need a 30-litre fermenter with an airlock, a hydrometer, a thermometer, a long-handled spoon, a bottle capper, crown seals, and bottles. A no-rinse sanitiser is essential. AHB stocks no-rinse sanitiser specifically for home brewing. AHB starter kits include all of this in one bundle if you are starting from scratch.
How long from brew day to first drink?
Allow 4 to 6 weeks total. Fermentation takes 7 to 14 days depending on temperature. After bottling, the beer needs at least 2 to 3 weeks to condition and carbonate. Most kits are at their best around week 5 or 6.
Can a beginner brew this kit?
Yes. Extract recipe kits are the most approachable entry point to home brewing. The malt extract is already prepared, so there is no grain mashing or complex calculations involved. Follow the step-by-step instructions included and you will produce a solid result on your first brew.
