The details
This is our take on Leffe Blonde, the classic Belgian abbey blonde. It brews a golden, fruit-and-spice ale at around 5.3% ABV, all driven by an authentic Belgian Abbey yeast with no added flavourings. A smooth, characterful introduction to brewing Belgian beer at home.
What it is like to brew
This kit keeps brew day simple and lets the yeast do the talking. The malt extract base gives a clean golden canvas, then the Belgian Abbey yeast, fermented warm, produces the signature vanilla, clove and soft fruit. Ferment anywhere from 18 to 28 C, leaning warmer for more spice and ester character.
Why this kit works
- Authentic Belgian Abbey yeast for genuine abbey-blonde character
- Clean malt extract base and a straightforward brew day
- Wide fermentation range that suits warm Australian conditions
- Yeast-driven flavour with no artificial flavourings
When it makes sense
Works well if you have brewed a few standard ales and want to try a Belgian style without a complicated process. The wide temperature tolerance makes it forgiving, so it is also a confident step up for a keen beginner.

Hamish's verdict
The yeast is the star, so pitch healthy and ferment warm, around 22 to 24 C, to bring out the banana and clove. Resist the urge to cold crash hard; a little haze and yeast character is true to the style.

Is this an official Leffe product?
No. This is an independent recipe inspired by the classic Belgian abbey blonde. It is not affiliated with, licensed by or endorsed by the brand owner. It is our own take on the style.
Where do the vanilla and clove notes come from?
From the Belgian Abbey yeast, not from added flavourings. Fermented warm, this yeast produces spicy clove and soft vanilla notes along with fruity esters of banana, pear and apple. Ferment at the warmer end of the range to push more of that character.
What makes a Belgian beer taste the way it does?
Most of the character comes from the Belgian yeast rather than the hops. Fermented warm, Belgian ale and abbey yeasts throw fruity esters such as banana, pear and stone fruit, along with spicy phenols like clove and pepper. It is the defining feature of the style.
Do I need temperature control to brew this?
No, and warmer Australian conditions actually suit it. Belgian ale and abbey yeasts ferment well at room temperature, and the warmth helps develop the fruity, spicy yeast character. Just avoid going above the listed range, which can push harsh fusel alcohols.
How much beer does this kit make?
It makes 21 litres, which is roughly 28 longneck bottles (750ml) or about 55 stubbies (330ml).
What equipment do I need to brew this kit?
A fermenter with lid and airlock, a no-rinse sanitiser, a thermometer, a hydrometer, and bottles or a keg for packaging. Our starter equipment kits include everything you need.
