The details
The Hound's Tooth Scotch Brown Ale is a smooth, malt-forward brown ale created by AHB Master Brewer Matthew. Rich roasted malt meets a gentle balance of American and British hops for a beer that is easy to drink and genuinely impressive to pour. It makes a great first dark ale, and the result is good enough to win over experienced brewers too.
What it is like to brew
This kit was built with first-time and early-stage brewers in mind, but the recipe is the real deal. A blend of three roasted and caramel specialty grains is steeped before the boil for depth, an Old malt extract base carries the body, and a carefully chosen mix of American and English hops keeps it balanced. Steeping grains is simple, no mashing required, so brew day stays straightforward.
Why this kit works
- Created by AHB Master Brewer Matthew over many test brews
- Three roasted and caramel specialty grains for malt depth
- A balanced blend of American and English hops
- Beginner friendly: grains are steeped in a bag, no mashing required
When it makes sense
A great choice for a first dark ale that does not feel like a beginner beer. Works well when you want something smooth and malt-forward that still impresses.

Hamish's verdict
Do not let the beginner-friendly label fool you, Matthew spent a lot of brews dialling this in and it shows. Steep the specialty grains as instructed for the full malt depth, and give it a few weeks to settle. It punches well above an entry-level kit.

Quick answers
Questions about this product, shipping and orders. See the FAQ page for more topics.
Monday to Friday, 9-4pm AEST.We normally get back to you within a day—often sooner.
Do I need to mash the specialty grains?
No. Crystal and caramel grains are pre-converted, so you simply steep them in hot water in a grain bag, like a large tea bag, before the boil. It adds malt depth and colour with no mashing and no special equipment.
Is this really suitable for a first-time brewer?
Yes. It was designed with first-time and early-stage brewers in mind. The ingredients are pre-measured, the grains are steeped rather than mashed, and the instructions are step by step, so it is approachable while still producing an impressive beer.
Do I need temperature control to brew this?
No. This is an ale and ferments well at room temperature (around 18 to 23 degrees C), so you do not need a temperature-controlled fridge.
What equipment do I need to brew this kit?
A fermenter with lid and airlock, a no-rinse sanitiser, a thermometer, a hydrometer, and bottles or a keg for packaging. Our starter equipment kits include everything you need.
