Hamish's tip

M66 is the right yeast choice here and it is doing a lot of the work — ferment at the lower end of the range (18 to 19 degrees C) to keep the fermentation clean and avoid any yeast esters competing with the hop character. Add the Eclipse as a dry hop on day 4 to 5 and leave for 3 days before bottling. Longer than that and the more subtle notes start to muddy. Drink this one within 8 weeks of bottling.
