What style of beer is this kit?
This is a Bavarian Hefeweizen — a traditional German wheat beer brewed with a high proportion of wheat malt and a specialised Bavarian yeast strain that produces the characteristic banana and clove flavours that define the style.
Why does this beer taste of banana and clove?
The banana and clove flavours come from the yeast, not from any added ingredients. Bavarian wheat beer yeast produces isoamyl acetate (banana) and 4-vinylguaiacol (clove) as natural fermentation by-products. The balance between the two is influenced by fermentation temperature: warmer fermentation produces more banana character, cooler fermentation emphasises clove.
Should I serve this beer cloudy?
Yes — absolutely. The haze is a defining characteristic of the Hefeweizen style. When bottled, the yeast settles at the bottom; traditional Bavarian practice is to swirl the last third of the bottle to rouse the yeast back into suspension and pour it all into the glass. How long does this beer take to be ready?
Around 10–14 days in the fermenter, then 1–2 weeks in the bottle for carbonation. Hefeweizen is best enjoyed fresh and young — this is not a style that benefits from long ageing.
How is this different from the October Fest Wheat kit?
Both are wheat beer kits, but they produce quite different results. The Bavarian Hefeweizen uses a Bavarian wheat yeast that produces the classic banana-clove character of the style. The October Fest Wheat is a Bavarian wheat ale with a hop tea addition using Saaz hops and M20 Bavarian Wheat yeast — a slightly different approach with its own character. Both are excellent; this kit is the more traditional of the two.

Why is my wheat beer cloudy and is that normal?
Yes, cloudiness is correct and expected in a Hefeweizen or wheat beer. The haze comes from wheat proteins and the specific yeast strain used (typically an unfiltered Bavarian hefeweizen yeast). Do not cold crash or fine a wheat beer unless you specifically want a clearer result, as doing so strips some of the characteristic yeast-driven flavour and aroma.
How do I get more banana or clove character in my wheat beer?
The choice of yeast is crucial, such as Bavarian and Belgian wheat and Belgian ale yeast strains. The banana (isoamyl acetate) and clove (4-vinyl guaiacol) balance is controlled by fermentation temperature. Ferment at the lower end of the range (17 to 18 degrees C) to push clove character. Ferment at the higher end (22 to 23 degrees C) for more banana. Pitching rate matters too: under-pitching slightly promotes ester production and pushes the banana character.
What is a malt extract recipe kit?
A malt extract kit provides the main fermentable sugars in a concentrated liquid or dry form, already converted from grain at a commercial brewery. You add water, yeast, hops, then ferment. It skips the grain mashing step, which cuts brew day down to about 30 to 45 minutes while still producing full-flavoured craft beer.
What is the difference between an extract kit and a fresh wort kit?
A fresh wort kit (FWK) delivers pre-brewed, unfermented wort in a bag, ready to pour straight into the fermenter and pitch yeast. No heating required. An extract kit requires you to dissolve the malt in hot water and add hops at various stages, which takes about 30 to 45 minutes. FWKs produce brewery-fresh flavour with almost zero work.
What equipment do I need to brew this kit?
You need a 30-litre fermenter with an airlock, a hydrometer, a thermometer, a long-handled spoon, a bottle capper, crown seals, and bottles. A no-rinse sanitiser is essential. AHB stocks no-rinse sanitiser specifically for home brewing. AHB starter kits include all of this in one bundle if you are starting from scratch.
How long from brew day to first drink?
Allow 4 to 6 weeks total. Fermentation takes 7 to 14 days depending on temperature. After bottling, the beer needs at least 2 to 3 weeks to condition and carbonate. Most kits are at their best around week 5 or 6.
