Mangrove Jack's Amber Pure Liquid Malt Extract is 100% malted barley extract in a 1.5kg pouch, with no dextrose or maltodextrin added. Use it as the fermentable base for your own extract recipe, or add it to a kit to lift body, colour and alcohol.

When to choose amber over light or dark
Choose amber when you want malt character in the finished beer, not just alcohol. It brings a biscuity, lightly nutty note and a deeper colour than the Black Rock Light 1.7kg, without the roast edge of the Black Rock Dark 1.7kg. In an amber or brown ale it can carry the whole grain bill on its own.
Choose light extract instead when you are brewing a pale ale, lager or anything where you want the hops in front and the malt in the background. Amber will darken the beer and push it maltier whether you want that or not.
Choose liquid over dry malt extract when you want the flavour. Liquid extract is cold filled, so it keeps more of the delicate malt aroma that gets driven off when extract is spray dried. Dry extract stores longer and is easier to weigh out in part quantities, which is why we stock it in 20kg for people brewing regularly.
Practical notes
As a rule of thumb, 1kg of liquid malt extract lifts a 23L batch by about 0.014 SG. This pouch will add roughly 0.021, so it takes a standard tin kit from around 1.038 up towards 1.059 if you use the whole thing. Work out your target gravity before you tip it in.
Take the kettle off the heat before you add it. Liquid extract sinks and scorches on a hot element, and scorched extract puts a burnt note through the whole batch that nothing will fix. Stir until it is fully dissolved.
Standing the pouch in warm water for a few minutes makes it pour properly. Straight out of a Melbourne winter cupboard it moves like cold honey and you will leave a good portion of what you paid for stuck to the inside.
Store unopened in a cool, dark cupboard. Once opened, decant what you do not use into a sealed container and refrigerate it. Liquid extract darkens with age and heat, so an old pouch will brew a darker beer than a fresh one.
