M24 is Mangrove Jacks' flexible lager yeast — designed for brewers who want authentic lager character but have modest cooling capability rather than a full cold fermentation setup. Where M84 and M76 require strict 8–14°C fermentation, M24 produces good lager character from 10°C up to 20°C.
Best Suited To
- Pilsner, Munich Helles, Märzen
- American Lager, Cream Ale, Blonde Ale
- Any style where clean, crisp lager character is the goal with modest cooling

When to Choose M24
Choose M24 over M84 or M76 when your temperature control reaches 14–18°C but not the 8–12°C required for traditional cold-fermented lager. M24 is more forgiving across a wider temperature range.
Choose M54 over M24 when you have no cooling and must ferment at normal ale temperatures (17–23°C). M54 is specifically designed for warm-fermentation lager. M24 produces its best results with at least some cooling.
Practical Notes
Pitch rate matters more at lower temperatures. Below 14°C, use two sachets per 23L — lager yeast activity slows with temperature and the higher pitch rate compensates.
A diacetyl rest is recommended after primary fermentation: raise to 18°C for 48 hours before cold crashing. This prevents butterscotch character in the finished beer.
Do not ferment M24 above 20°C expecting lager character — use M54 instead above that range.
Keep refrigerated. Once opened, reseal and use within 7 days.
