Mosaic is one of the most complex and popular hops in the world, a US variety bred from Simcoe and loved for a deep mix of blueberry, mango, citrus and tropical fruit. It is a high-alpha, dual-purpose pellet that most brewers save for late and dry-hop additions in juicy, hop-forward beers.

When to choose this over alternatives
Mosaic is prized for its layered, ever-changing fruit character, with blueberry and mango over a dank, tropical base. It is Citra's natural partner: where Citra leans clean grapefruit and lime, Mosaic adds berry and depth, so the two build a full tropical-berry wall in a hazy. It shares some resinous DNA with its parent Simcoe. Run it single-hopped to show off its complexity, or blend it with Citra and Galaxy for a modern juice bomb.
Practical notes
Mosaic rewards late use. Keep it for the whirlpool and dry hop where its blueberry and tropical fruit really shows, and use only a small early charge for bittering since the alpha is high. For a hazy or juicy pale ale, 30 to 60g of dry hops is a good starting point. A short contact time of 2 to 3 days keeps the aroma clean. Store cold and sealed, push the air out, and use within 12 months of opening.

What beer styles is Mosaic best for?
Hazy IPA, New England IPA, American pale ale and XPA, plus any juicy, tropical beer. It is one of the go-to hops for modern fruit-forward ales.
Can I use Mosaic for bittering?
Both, but it earns its keep as an aroma and flavour hop. The alpha is high (typically 11-14%), so a small early addition bitters efficiently. Save most of it for whirlpool and dry hopping.
What can I substitute for Mosaic?
Nothing matches its complexity exactly. Citra is the closest partner for tropical punch, and its parent Simcoe covers the resinous, piney side.
How much Mosaic should I dry hop with?
For a hazy or juicy pale ale, start around 30g to 60g per 20L and adjust to taste. A short contact time of 2 to 3 days keeps the berry and tropical aroma bright.
