Topaz is a high-alpha Australian hop from Hop Products Australia, useful both as an efficient bittering hop and, used late, for a resinous tropical and grassy character. It is a versatile pellet that can do the heavy lifting in modern Australian ales.

Reach for Topaz when you want a lot of clean bitterness from a small weight, with the option of a resinous tropical aroma if you use it late. Its very high alpha makes it economical as a bittering hop, an Australian alternative to Magnum where you do not mind a little character. Used late it leans grassy and tropical, so many brewers pair it with juicier Australian hops like Galaxy, Eclipse or Vic Secret that push the fruit forward.
Practical notes
Topaz shines as an early bittering charge, where its high alpha reaches a target IBU with less vegetal matter. Used late it can turn grassy if pushed hard, so treat dry-hop rates with some restraint, around 20 to 35g, and consider blending. Grown here by HPA, it is usually very fresh in Australia. Store cold and sealed, push the air out, and use within 12 months of opening.
