When to choose this over alternatives
Choose Hersbrucker when you want a soft, floral noble character that is a touch fruitier and milder than Hallertau. It is gentle and perfumed rather than peppery like Saaz, which makes it lovely in delicate lagers and wheat beers where you do not want the hops to shout. If a German recipe just says noble hops, Hersbrucker sits comfortably alongside Hallertau and Tettnang. Use a clean high-alpha hop like Magnum for the bittering charge.
Practical notes
Because the alpha is very low, you need a generous weight of Hersbrucker to reach a given bitterness, so lager recipes often call for large amounts. It is happiest in mid-to-late boil and flameout additions where the soft floral aroma survives. Dry hopping gives only a subtle effect. Store cold and sealed; low-alpha hops fade faster, so use it fresh for the best aroma.

What can I substitute for Hersbrucker?
Hallertau is the closest, with Tettnang and Saaz also in the noble family. All share the floral, herbal German character.
Should I dry hop with Hersbrucker?
