When to choose this over alternatives
Choose Centennial when Cascade is not loud enough. It carries the same grapefruit-and-flowers character with a sharper lemon-citrus edge and enough alpha to handle bittering as well. It is a cornerstone of the classic West Coast IPA, especially blended with Chinook for pine and Cascade for a rounder citrus base. If you want fruitier, more tropical notes instead, reach for Citra or Amarillo.
Practical notes
Centennial earns its keep across the boil. Use it early for clean bittering, or in the whirlpool and dry hop for that bright lemon-citrus punch. For an American IPA, 30 to 60g of dry hops works well. It is a great hop to build a recipe around and blends cleanly with other US C-hops. Store cold and sealed, push the air out, and use within 12 months of opening for the freshest aroma.

American pale ale, West Coast IPA and double IPA, plus amber ales and barley wine. It is a defining hop of the American IPA.
Is Centennial good for bittering?
Yes. With typical alpha of 9-11.5% it bitters cleanly and efficiently, and it still delivers a strong lemon-citrus aroma when used late, which makes it a true dual-purpose hop.
What can I substitute for Centennial?
Cascade is the closest in character, just softer. Amarillo brings a similar citrus-floral profile with more orange. A Cascade and Chinook blend also gets you close.
How much Centennial should I dry hop with?
For an American IPA, start around 30g to 60g per 20L. Centennial holds its bright citrus aroma well, so it rewards a solid dry-hop charge.
