The beer
A clean, light-gold lager. 26 IBU of restrained bitterness over a soft, subtly sweet malt base, lager malt with a little wheat for a smooth body and a soft white head. Crisp, balanced and built for easy drinking. The sort of lager you reach for on a hot afternoon.

When you know you have nailed it
Appearance: Bright, pale gold with a soft white head.
Aroma: Clean and neutral, a faint grainy malt note. A true lager should smell fresh, not fruity.
Flavour: Light, crisp bitterness. Soft malt sweetness, dry clean finish. W-34/70 has an ideal range of 12-15 degrees C but works well at temperatures up to 22. Run it hotter than that and you risk fruity, ale-like notes, so hold the temperature steady. Check your final gravity is stable over two days before packaging.
Mouthfeel: Light to medium body, well carbonated and lively.
Make it your own
Lager is the cleanest canvas you can brew. A light dry hop on around the 4th day of fermentation lifts it without turning it into a pale ale.
Add 25-50g dry hops directly to the fermenter on day 4 to push the character:
- Saaz or Hallertau. Classic noble lager. Floral, spicy, traditional.
- Tettnang or Hersbrucker. Soft herbal, continental character.
- Wakatu or Motueka. NZ lager lift. Lime, citrus, fresh.
No dry hops? A clean lager needs nothing more, this is the style at its most honest.
Fermentation guide
- Sanitise your fermenter thoroughly.
- Pour the fresh wort in, top up to 23L with cold water.
- Pitch the SafLager W-34/70. 12-15 degrees C is ideal, though it works well up to 22.
- Ferment 7-10 days until the gravity is stable, add dry hops late if using.
- Condition cold for one to two weeks before bottling or kegging. W-34/70 ferments clean, and a cold conditioning spell tightens it up into a crisp, lager-like finish. The longer the cold conditioning, the crisper the result.

What is a fresh wort kit?
A fresh wort kit is actual brewery wort, mashed, hopped and boiled by professionals, that you ferment at home. The technical brewing work is done. You pitch the yeast, manage the fermentation temperature and produce a finished beer. It is not the same as a malt extract kit, where the wort is reduced to a concentrated liquid malt. Fresh wort produces a clean, fresh brew character.
What equipment do I need?
A fermenter (at least 25L), an airlock, sanitiser, and bottles or a keg. If you have those, you are ready to brew.
Can I brew this lager without a fridge or temperature control?
Yes. It ships with SafLager W-34/70, a true lager yeast with an ideal range of 12 to 15 degrees C that still works well at temperatures up to 22, so no fridge is essential. The cooler you can hold it, the crisper the result, and a cold conditioning spell afterwards sharpens the clean lager finish.
How long until I can drink the lager?
Allow 7 to 10 days for fermentation, then a week or two of cold conditioning, then bottle conditioning. Lager rewards patience more than most styles, the longer the cold conditioning, the cleaner and crisper it gets.
How much beer does it make?
23 litres, approximately 64 standard bottles or one full 19L keg with a few bottles spare.
Does it contain gluten?
Yes. Contains gluten (malted barley and wheat). Not suitable for coeliacs or those with wheat intolerance.
