The beer
A golden amber IPA. 38 IBU of punchy bitterness balanced by a biscuity malt backbone, ale malt with wheat, toffee malt and light crystal. The kind of IPA you would pay $10 for at a good bottle shop. This one costs way less and has your name on it.

When you know you have nailed it
Appearance: Clear golden with a persistent white head that clings to the glass.
Aroma: Hop-forward, citrus or pine depending on whether you have dry hopped. Biscuity malt underneath.
Flavour: Moderate to assertive bitterness. Clean, dry finish. No sweetness. If it finishes sweet, fermentation stopped early, check your final gravity is at or near 1.012 before packaging.
Mouthfeel: Medium body, well carbonated. Should feel lively, not flat.
Make it your own
We highly recommend dry hopping with your favourite hops on around the 4th day of fermentation to get extra flavour and aroma and make this brew your own.
Add 25-50g dry hops directly to the fermenter on day 4 to push the character:
- Cascade. West Coast IPA. Grapefruit, pine, classic American bitterness.
- Nelson Sauvin. NZ IPA. Gooseberry, white wine, tropical lift.
- Galaxy. Australian pale ale character. Stone fruit, passionfruit, softer finish.
No dry hops? The base wort stands alone, clean, bitter, honest.
Fermentation guide
- Sanitise your fermenter thoroughly.
- Pour the fresh wort in, top up to 23L with cold water.
- Pitch the Safale US-05 at 18-22 degrees C.
- Ferment 7-10 days, add dry hops on day 4 if using.
- Condition for up to a week before bottling or kegging. If impatient a couple of days conditioning is fine.

What is a fresh wort kit?
A fresh wort kit is actual brewery wort, mashed, hopped and boiled by professionals, that you ferment at home. The technical brewing work is done. You pitch the yeast, manage the fermentation temperature and produce a finished beer. It is not the same as a malt extract kit, where the wort is reduced to a concentrated liquid malt. Fresh wort produces a clean, fresh brew character.
What equipment do I need?
A fermenter (at least 25L), an airlock, sanitiser, and bottles or a keg. If you have those, you are ready to brew.
Can I adjust the recipe?
The base wort is fixed, the grain bill and hop additions are already done. But dry-hop additions on day 4 let you shift the hop character significantly. Add 25 to 50g of your favourite hops directly to the fermenter.
How long until I can drink it?
Allow 7 to 10 days for fermentation, then 3 weeks plus bottle conditioning. Four weeks from brew day to first pour is a reasonable expectation for a well-conditioned result. The longer you leave it in the bottle the better.
How much beer does it make?
23 litres, approximately 64 standard bottles or one full 19L keg with a few bottles spare.
Does it contain gluten?
Yes. Contains gluten (malted barley and wheat). Not suitable for coeliacs or those with wheat intolerance.
