The beer
A hazy golden ale with a creamy body and a soft, fruit-forward finish. Wheat and oats give it the cloud and the smooth mouthfeel; NZ Green Bullet handles the bittering so it never turns harsh. This one rewards dry hopping more than any other kit we stock, that is where the juice comes from. Pile the late hops in and make it yours.

When you know you have nailed it
Appearance: Hazy gold, soft and cloudy, with a creamy off-white head. It should look like juice, not crystal clear.
Aroma: Big tropical and stone fruit lift if you have dry hopped well. Soft, never sharp.
Flavour: Juicy and rounded. Low perceived bitterness, fruit and soft malt out front, smooth finish. If it tastes thin or clears bright, you have under-hopped, push the dry-hop charge up next time.
Mouthfeel: Full, creamy and soft from the wheat and oats. Medium to low carbonation suits the style.
Make it your own
Dry hopping is not optional with a hazy, it is where the whole character comes from. Add hops on around the 4th day of fermentation, and go heavier than you would for a clean ale.
Add 100-200g dry hops directly to the fermenter on day 4 to build the haze and the juice:
- Mosaic. Mango, berry, the classic hazy backbone.
- Nelson Sauvin. White wine, gooseberry, tropical lift.
- Motueka. NZ stone fruit and citrus, vibrant and fresh.
- NZ Cascade. Soft citrus and floral roundness.
Blend two or three for depth. The bigger the late hop charge, the juicier and hazier the result.
Fermentation guide
- Sanitise your fermenter thoroughly.
- Pour the fresh wort in, top up to 23L with cold water.
- Pitch the SafAle S-33 at 18-22 degrees C.
- Ferment 7-10 days, add 100-200g dry hops on day 4.
- Condition for a minimum of 2 weeks before bottling or kegging. Drink hazies fresh, the fruit fades with age.

What is a fresh wort kit?
A fresh wort kit is actual brewery wort, mashed, hopped and boiled by professionals, that you ferment at home. The technical brewing work is done. You pitch the yeast, manage the fermentation temperature and produce a finished beer. It is not the same as a malt extract kit, where the wort is reduced to a concentrated liquid malt. Fresh wort produces a clean, fresh brew character.
Do I have to dry hop the Hazy?
For a true hazy, yes. The base wort is balanced and soft, but the tropical, juicy aroma that defines the style comes almost entirely from the dry hops. Without them you get a pleasant soft golden ale, not a hazy. Add 100 to 200g on day 4.
What equipment do I need?
A fermenter (at least 25L), an airlock, sanitiser, and bottles or a keg. If you have those, you are ready to brew.
How long until I can drink the Hazy?
Allow 7 to 10 days for fermentation, then about 2 weeks conditioning. Hazies are best drunk fresh, within a couple of months, while the hop aroma is at its peak. Do not cellar this one.
How much beer does it make?
23 litres, approximately 64 standard bottles or one full 19L keg with a few bottles spare.
Does the Hazy contain gluten?
Yes. Contains gluten (malted barley, wheat and oats). Not suitable for coeliacs or those with wheat intolerance.
