What are Hallertau hops?
Hallertau (Hallertauer Mittelfrüh) is one of Germany's four traditional noble hop varieties, grown in the Hallertau region of Bavaria. It delivers a mild, spicy, herbal aroma that is the defining character of German lagers and wheat beers.
Do I need temperature control to brew this lager?
No, the Californian lager yeast performs best at 18-20°C. Just make sure you keep the fermentation under 20°C and you will get a clean, crisp result.
How does German Lager differ from Australian Lager?
German lagers typically use noble hops (Hallertau, Perle) for a spicier, more herbal character than Australian lagers, which use varieties like Pride of Ringwood for a simpler, cleaner bitterness. German lagers also tend to have a slightly more pronounced malt presence.
How long should this lager condition?
After primary fermentation at 12-15°C (2-3 weeks), cold condition at 2-4°C for a minimum of 4 weeks. The extended cold rest is what gives German lager its characteristic crispness and clarity.
