What causes the banana flavour in hefeweizen?
The banana character comes from isoamyl acetate, a fermentation ester produced by Bavarian wheat yeast strains. Fermentation temperature significantly affects this, slightly lower temperatures (17-19°C) emphasise banana, while higher temps (21-23°C) bring out more clove.
Should hefeweizen be cloudy?
Yes, traditional Bavarian hefeweizen is unfiltered and deliberately hazy from yeast in suspension. Don't fine or filter this beer. When pouring from a bottle, swirl the last centimetre of yeast sediment into the glass.
Is hefeweizen suitable for beginners?
Yes, hefeweizen is one of the most beginner-friendly all grain styles. The grain bill is straightforward, hop additions are minimal, and the yeast is very vigorous and forgiving. The trickiest part is nailing the banana/clove balance through fermentation temperature.
