Coffee syrups

A syrup is the fastest way to change what a coffee tastes like without changing the coffee. One pump into the cup before the milk, and a flat white becomes something else. It is also how cafes build a menu of ten drinks out of one espresso blend.

These are Arkadia's syrups, made in Australia, in the 1 litre and 750ml bottles that fit a standard pump.

The flavours

  • Vanilla. The one to own if you own one. It rounds off a coffee rather than covering it, and it is the base of a vanilla latte, most iced coffees and a good half of the drinks on a cafe board.
  • Caramel. Sweeter and more assertive. Made for milk-forward drinks, and the flavour most people mean when they order something sweet.
  • Salted Caramel. Caramel with the edge taken off the sweetness. It has outlasted every prediction that it was a fad, and it sells.
  • Butterscotch. Buttery and slightly toffee-like, warmer than caramel and less sharp. Underrated, and a genuine point of difference on a menu where everyone else has the same three bottles.
  • Hazelnut. The classic nutty syrup, and the natural partner to a dark roast.

The pump

The Arkadia syrup pump fits the 1 litre bottles and doses consistently, which is the whole point. Free-pouring syrup means every cup is different and the bottle empties faster than it should. A pump is a small purchase that pays for itself in portion control alone, and it is the difference between a syrup that lasts and one that runs out mid-service.

How much

Start at one pump for a regular cup and two for a large, then adjust to your coffee. A darker, more bitter roast will carry more syrup before it starts tasting like dessert. A lighter, more acidic one needs less.

Add the syrup to the cup before the espresso rather than after the milk. It disperses properly on the way through instead of sitting at the bottom, and you will not need to stir it.
