Strain and let the spirit rest before the first pour.

How long should oak sit in the spirit?
You will notice change within days and deeper colour and body across one to two weeks. Warmer rooms and higher strength extract faster. Cooler rooms take longer. Taste at intervals and pull the chips when the balance suits your palate, then allow a short rest.

What strength base spirit works best?
Aim for about 40 percent ABV for a clear read on flavour. If you want more weight, test a portion at higher strength and compare glasses side by side. Off notes in the base carry through, so start with a clean foundation before you add oak or flavour.
