What is the Air Still Pro?

The Air Still Pro is a compact, 2-in-1 distillation system designed for home use. It offers both reflux and pot still modes, enabling you to produce:

How Does the Air still Pro Work?

Step 1: Prepare Your Wash

Ferment your sugar wash using Turbo Yeast, clarify it, and get it ready for distillation.

Step 2: Choose Your Mode

• Reflux Mode – Ideal for vodka & neutral spirits (90% ABV)
• Pot Still Mode – Better for whiskey, rum, and gin (80% ABV)

Step 3: Distil

• Turn on the Air Still Pro.
• The air-cooled condenser cools the vapour without external water.
• Automatic foreshots vial collects the first 30ml for safe discarding.

Step 4: Filter & Dilute

Use carbon filters and distilled water to dilute to 40% ABV for consumption

Reflux Distillation with the Air Still Pro

Reflux distillation is highly efficient and allows for the separation of alcohol from the fermented wash with great precision. The resulting spirit from a successful reflux distillation using the Air Still Pro is a very pure, polished neutral spirit.

The ideal base for flavouring or blending using Still Spirit essences. Essentially a blank canvas to make absolutely any spirit you like.

Reflux distillation requires careful control of temperature, flow rates, and reflux ratios to achieve desired results. The Air Still Pro has this covered with automatic foreshots collection (the heads) and precise temperature control polished neutral spirit at 90% abv.

Pot Distillation with the Air Still Pro

Pot mode distillation, often referred to as "pot still distillation," is a traditional method of distillation used to produce various spirits, including, gin, whiskey, rum, and brandy.

Pot still distillation is known for producing spirits with distinct flavours and characteristics, as it retains more of the original flavours and compounds from the fermented wash. This is why it is commonly used in the production of gin, whiskey and other artisanal spirits, where flavour complexity is highly valued.

FAQ's

Q: Can I really make gin at home with this kit?
Yes! The Air Still Pro is perfect for beginners. You create a neutral base, then infuse botanicals for homemade gin.

Q: How do I dilute my spirit after distilling?
Use distilled water + alcoholmeter to proof down to 40% ABV for consumption.

Q: Is it legal in Australia?
You can legally own and operate the Air Still Pro (under 5L) for water purification or essential oils. To distil alcohol, a license is required.

Q: What’s better—pot or reflux mode for gin?
Use reflux mode to create a clean base spirit. Use pot mode to extract botanical flavours during a second distillation.

Q: Can I skip the carbon filtering for gin?
For gin, yes and no. For the stripping run in reflux mode to make your base spirit carbon filtration its essential. For the spirit run in pot mode, filtration is not required as you want to retain the flavour. But if you’re making neutral spirits for adding flavour in after filtration like gin, vodka, whiskey, rum or liqueurs, always carbon-filter.

Q: How long does it take to make a batch?
Around 4 hours for distilling, plus time for fermentation and infusion.
