The details
Still Spirits Distiller's Enzyme Glucoamylase is a 12g sachet of the second enzyme in a grain mash. Still Spirits describes it as "a fungal-derived enzyme that breaks down dextrins into simple sugars before the fermentation process". One sachet treats up to 7.5kg of starch for a 25 litre wash.
What it does
Alpha amylase breaks starch into dextrins, but yeast cannot ferment dextrins. Glucoamylase finishes the job, cutting the dextrins into glucose the yeast can use. Skip it and a grain wash ferments short, leaves sugar behind and gives you less spirit per kilo of grain.
How to use it
Add it to the liquefied starch or malted grain mash once it has cooled to 65 degrees or below. Either hold the mash at 50 to 60 degrees for an hour, or cool it and add the enzyme with the yeast so conversion and fermentation run together at 30 to 35 degrees. It follows the alpha amylase step, which is done hot.
When you need it
Any wash made from grain, potato or other starch rather than sugar. A plain sugar or dextrose wash does not need enzymes at all.
