SafAle T-58 is a specialty Belgian ale yeast selected for its distinctive estery, peppery, and spicy character. It is POF+ (phenolic off-flavour positive), meaning it intentionally produces clove-like phenolic compounds — a defining feature of Belgian and wheat beer styles, not a flaw.
Best suited to: Belgian ales, Belgian witbier, saison, Belgian tripel, spiced ales, farmhouse ales, specialty ales where complexity and phenolic character are part of the recipe intent.
Fermentation parameters:
- Temperature: 12–25°C (optimal 15–20°C for balanced character)
- Attenuation: 71–75%
- Flocculation: Medium (powdery haze when resuspended — normal for this strain)
- Alcohol tolerance: up to 11.5% ABV
- Pitching rate: 50–80g per 100L
Flavour contribution: Peppery and spicy with clove-like phenolic notes and underlying fruity esters. Character intensifies at higher fermentation temperatures. The medium, powdery sedimentation is a characteristic of this strain and does not indicate a problem.
Choose T-58 over M41 Belgian when you want more phenolic/spicy character with less dominant fruit esters. T-58 is spice-forward; M41 leans more fruity.
Pitching note: Rehydrate in 10x its weight in 27°C water for 15 minutes, or pitch directly onto wort at standard gravity.
Storage: Keep refrigerated. Once opened, reseal and use within 7 days.
