Why does the beer taste of banana and clove?

Those flavours come entirely from the yeast. The M20 Bavarian Wheat yeast is a traditional German strain that naturally produces isoamyl acetate (banana ester) and 4-vinylguaiacol (clove phenol) during fermentation. These are hallmarks of an authentic hefeweizen — not additives.

How much beer does this kit make?

This kit produces approximately 21 litres — enough for around 28 x 750ml longnecks or 55 x 330ml stubbies.

Should I serve this beer cloudy?

Yes — the haze is intentional and characteristic of the hefeweizen style. Don’t filter it or leave it to drop crystal clear. Serve it cold in a tall weizen glass, gently swirling the bottle first to rouse the yeast sediment before pouring.
