M29 is a French-origin saison yeast that produces the complex, spicy, earthy character of traditional farmhouse ale — and its ability to ferment happily at very high temperatures without producing off-flavours is what separates it from other Belgian or spicy yeasts. Saison was historically brewed in hot conditions, and M29 reflects that heritage.
Best suited to: Saison, Farmhouse Ale, Bière de Garde, Table Beer.
Fermentation parameters:
- Temperature: 18–35°C (optimal saison character at 25–32°C)
- Attenuation: Very High (85%+)
- Flocculation: Low
- Pitching rate: 1 sachet per 23L at standard gravity
Flavour contribution: Spicy, earthy, fruity, and complex. At 18–22°C it is more restrained and cleaner; at 28–32°C it produces the full farmhouse expression — spice, earth, and funk. Most saison brewers target the higher end of the range deliberately.
Saison stall warning: If fermentation appears to stall mid-fermentation, raise the temperature by 2–3°C and rouse the fermenter gently. This is common with saison strains and is easily resolved with a temperature boost.
Choose M29 over T-58 when you want the full farmhouse/saison profile. T-58 is more broadly Belgian; M29 is specifically saison-focused with higher heat tolerance and better attenuation.
Storage: Keep refrigerated. Once opened, reseal and use within 7 days.
