M05 is formulated specifically for mead — honey wine with fermentation gravities and alcohol targets that push well beyond what standard ale or wine yeasts are designed for. Its high alcohol tolerance handles traditional mead gravities, and its clean neutral profile does not compete with the delicate floral and varietal character of quality honey.

Best suited to: Traditional Mead, Melomel (fruit mead), Cyser (apple mead), Metheglin (spiced mead), Short Mead (session strength), Show Mead.

Fermentation parameters:

  • Temperature: 15–30°C
  • Attenuation: Very High
  • Flocculation: Low-Medium
  • Alcohol tolerance: 18%+ ABV
  • Pitching rate: 1 sachet per 20–23L

Flavour contribution: Clean and neutral. The yeast profile stays out of the way, allowing the character of the honey — floral, waxy, earthy, fruity, or spicy depending on the varietal — to be the primary flavour.

Yeast nutrient is essential in mead — honey lacks the nitrogen, minerals, and vitamins that yeast need to ferment cleanly. Use a staggered nutrient addition protocol. Under-nourished mead fermentation produces hydrogen sulphide (rotten egg) off-flavours.

Choose M05 over wine yeasts when you want to preserve honey aroma. Lalvin EC-1118 and K1-V1116 are more aggressive and may strip delicate honey floral notes. M05 is designed specifically for honey fermentation.
