M15 is an authentic English ale yeast that produces the full-bodied, fruity, malt-forward character of classic British ales. It is high-flocculating and drops clear quickly, leaving rich residual sweetness that defines English bitter, porter, and stout styles where malt complexity is the point.
Best suited to: English bitter, Extra Special Bitter (ESB), English Pale Ale, porter, stout, mild, brown ale, old ale.
Fermentation parameters:
- Temperature: 18–22°C (lower end for cleaner profile; warmer for more ester character)
- Attenuation: Medium-High (70–75%)
- Flocculation: High
- Alcohol tolerance: up to 12% ABV
- Pitching rate: 1 sachet per 23L at standard gravity
Flavour contribution: Rich malt character with fruity esters — apple, pear, stone fruit. Leaves residual sweetness that suits English styles well. High flocculation means the beer clears relatively quickly without fining.
Choose M15 over S-04 when you want more ester character and a fuller body. S-04 is slightly cleaner and flocculates more firmly; M15 leaves more flavour complexity.
Pitching note: Rehydrate in 10x its weight in 27°C water, or pitch directly. Ferment at the lower end of the range (18–19°C) to keep ester character balanced.
Storage: Keep refrigerated. Once opened, reseal and use within 7 days.
