M54 is the practical lager yeast — designed to produce clean, lager-like character at normal ale fermentation temperatures (17–23°C). No cold fermentation required. If you want lager character but cannot hold your fermenter below 15°C for weeks, M54 is the solution.
Best suited to: California Common (Steam Beer), American Lager, Cream Ale, Blonde Ale, any style where clean, crisp lager character is the goal without cold fermentation.
Fermentation parameters:
- Temperature: 17–23°C (the key advantage — ale temperature, lager result)
- Attenuation: High
- Flocculation: High
- Alcohol tolerance: up to 9% ABV
- Pitching rate: 1 sachet per 23L at standard gravity
Flavour contribution: Clean, crisp, and neutral with a slight sulfury note during active fermentation — normal for lager strains, dissipates with conditioning. Noticeably cleaner and crisper than a standard ale yeast at the same temperature.
Choose M54 over M84 or M76 when you do not have cold fermentation capability. M84 and M76 produce better results at 8–14°C but stall and produce off-flavours if fermented warm. M54 is designed for warm-fermentation lager.
Pitching note: Pitch at 18–20°C and hold steady. A brief cold crash after primary fermentation improves clarity significantly.
Storage: Keep refrigerated. Once opened, reseal and use within 7 days.
