M84 produces authentic Czech and Bohemian-style lager character — soft, round, malt-forward, with very low ester production and the clean, bready finish that defines traditional Czech Pilsner. This is a true lager yeast requiring cold fermentation. You will need the ability to hold 8–14°C for several weeks to get the best from this strain.
Best suited to: Czech Pilsner, Bohemian Pilsner, Munich Helles, Märzen, Vienna Lager, German Dunkel.
Fermentation parameters:
- Temperature: 8–14°C primary; cold condition at 0–4°C for 4–6 weeks
- Attenuation: Medium-High
- Flocculation: High
- Alcohol tolerance: up to 9% ABV
- Pitching rate: 2 sachets per 23L — lager yeasts require higher pitch rates at cold temperatures
Flavour contribution: Very clean with soft, round maltiness. Produces some sulfur during active fermentation — this is normal and blows off over time. Extremely low ester production.
If you cannot ferment below 15°C use M54 California Lager instead, which is designed to produce lager-like character at ale temperatures.
Diacetyl rest: Raise temperature to 18°C for 48 hours at the end of primary fermentation before cold conditioning. Essential for clean lager character.
Storage: Keep refrigerated. Once opened, reseal and use within 7 days.
