M41 is a highly versatile Belgian ale yeast that produces the fruity, estery, spicy character found across the broad range of Belgian ale styles. It is highly attenuative and its flavour profile shifts noticeably with fermentation temperature — giving you significant control over the final character of your beer.
Best suited to: Belgian Golden Strong Ale, Belgian Pale Ale, Saison, Belgian Tripel (lighter character), Dubbel, Farmhouse Ale.
Fermentation parameters:
- Temperature: 18–28°C (character changes significantly across this range)
- Attenuation: High (80%+)
- Flocculation: Medium
- Alcohol tolerance: up to 12% ABV
- Pitching rate: 1 sachet per 23L at standard gravity
Flavour contribution: Fruity esters — banana, pear, stone fruit — with underlying spicy phenols. At 18–20°C the profile is more restrained. At 24–28°C the esters become pronounced and spice character intensifies. Temperature control is a flavour tool here, not just a safety measure.
Choose M41 over M47 when your recipe is a lighter Belgian style. M47 is better suited to darker, richer abbey styles. Choose M41 over T-58 when you want more fruit than spice.
Pitching note: Pitch at 18°C and allow temperature to rise naturally through fermentation for Belgian character.
